Saison anyone? Empty Saison anyone?

I'm after a good saison recipe now.

I have already ordered the yeast (Belgian Saison). I want something reasonably low in alcohol (~5%) - I understand that originally saison was brewed (in winter) for the summer harvest workers. In England (at least) brewing a good harvest beer earned you a reputation with the harvesters. The alloment seems to have been around 4-5 litres per worker, so I can't see the traditional saisons being brewed at 7% abv (especially with all those scythes around).

Ill post my recipe this afternoon Kingsley. It was meant to be a Wit, but was a fantastic Saison instead.
