The yeast was Wyeast 3724 - Belgian Saison. No starter, direct pitched.
It was originally meant to be a Wit beer with the saison yeast and I was going to use the yeast at the end as a big starter for a high alcohol saison- Hence the grapefruit zest and the torrified wheat.
But this yeast finished drier than I have ever seen and the zest didn't come through as much as I wanted.
The yeast is painfully slow. Leave it for at least 3 weeks at a relatively hot temperature. Mine finished at 1.004.

It's going to have to sit in the queue for a few weeks now, I've run out of keg-fridge space.

Not quite sure what I'm going to do with the wheat beer in the fermenter - keg it and turn the fermenter fridge down down 4 degrees I guess.  Maybe I should start making smaller batches ... but then I think, "what if this turns out fantastic ... and there's only 5 litres" ?  Wink
